Even the pickiest of eaters will get excited about eating their vegetables because they have a such a crispy coating. Air frying makes this such a simple dish to make, with minimal ingredients that takes less than 10 minutes.

Delicious Asparagus Fries

You will love this crispy asparagus dish because it is a quick side dish for a busy weeknight dinner. They are a wonderful finger food to grab on the go when doing chores, running out to pick up the kids or just relaxing at home. Asparagus fries have become a healthy snack around our house that the entire family loves. Incorporating this vegetable recipe into your repertoire makes a great addition to any meal morning, noon or night.

Ingredients:

asparaguseggs panko bread crumbsgarlic powdersmoked paprikaground black pepperolive oil spray

Optional Favorite Seasonings: grated parmesan cheese, fresh thyme or oregano, chipotle chili powder, kosher salt, lemon zest, Italian seasoning, everything but the bagel seasoning or fresh lemon juice. 

How to Make Asparagus Fries in the Air Fryer

Rinse the asparagus in cold water then pat the fresh asparagus spears dry with a paper towel. Trim the ends of the asparagus (approximately 2 inches) with a sharp kitchen knife and set aside. Whisk the eggs together in a shallow bowl. In a separate bowl, combine the panko breadcrumbs, garlic powder, smoked paprika and ground black pepper.  Then pour the breadcrumb mixture into a second shallow dish. Dip asparagus spears in the egg mixture, then dip each spear into the breadcrumb coating. Make sure you have a full uniform coating on each spear. Spray each asparagus with cooking spray (olive oil). Place the breaded spears in a single layer into the air fryer basket. Air fry asparagus fries at 400 degrees F for 7-8 minutes, use a pair of tongs and flip the asparagus halfway through the cooking process.  Carefully remove them from the air fryer basket and place them on a baking sheet with parchment paper to fully cool if making more than one batch. Serve while hot.  Optional Favorite Dipping Sauce: blue cheese dressing, hot sauce mixed with Greek yogurt, whole grain mustard, basil lemon dipping sauce or try a gooey hot cheese mixture.  Aioli Ingredients: Making an aioli from scratch requires 1 cup of mayonnaise and any desired spices or flavors that you and your family enjoy. Kitchen Tips: Use the asparagus trimmings to flavor soups, stews, or pasta water to add extra flavor. Use a food processor to mix dry ingredients if you prefer. Substitutions: Use non-stick spray, refined coconut oil instead of olive oil spray. If you do not have panko, use 1 cup Italian-style breadcrumbs or a panko cheese mixture with plain bread crumbs. Almond flour mixture and coconut flour with grated cheese can replace the breadcrumbs. I make this recipe in my 5.8 qt. Cosori air fryer. Depending on your air fryer, size and wattages, the cooking time may need to be adjusted 1-2 minutes.

What can I serve with this dish?

This asparagus with its crisp coating is a versatile vegetable that will be delicious with a butter lemon chicken with basil lemon aioli, crispy pan-fried pork chop or in a veggie niçoise salad accompanied by a juicy peppered steak.  Also, alongside perfectly cooked fish such as rosemary salmon, a chipotle-lime shrimp dish, cod or halibut piccata with tangy capers are all going to be amazing. With a beef lo mein, on top of a pasta primavera or fettucine alfredo will be super appetizing.

How to store leftover asparagus fries?

Let asparagus cool completely prior to storing so they remain as crispy as possible. Refrigerate in an airtight container for up to 3 days. Freezing cooked asparagus is not recommended because when they thaw out all the moisture inside will make the asparagus really mushy and inedible.

How to trim asparagus?

Whether you use thinner asparagus or thicker stalks of asparagus you will trim them the same way. There is a woody end that can be stringy at the bottom of each spear so the best way to trim the entire bundle of spears evenly is to place one spear between your index and thumb finger and gently snap. It will break at the weak point and from there you can cut the rest of the bundle the same length.

Can I use canned or frozen asparagus in this recipe?

I would not recommend either of these types of asparagus for this recipe. Frozen asparagus will contain a lot of water which will cause the asparagus to turn out soggy and they won’t crisp up. It is the same thing with canned asparagus, they are just too soft to start with and will get mushier through the cook time. MORE AIR FRYER RECIPES:
